The Middle East epitomizes cultural fusion and rich histories, evident in its vibrant bazaars and diverse culinary heritage. Families and friends unite around tables adorned with delectable dishes, sharing laughter and tales. Amidst deserts and seas, hospitality and tolerance prevail, weaving a tapestry of unity amidst diversity.

My Dish, from a village by Kerala's backwaters, is inspired by where the historic spice route shaped our rich cultural heritage. I aim to BREAK THE SHELLS of outdated mud crab cooking methods, moving beyond traditional curries. I believe every part of the crab can be utilised wisely akin to other types of meat. My signature dish combines my grandmother's traditional flavour with innovative, sustainable twists inspired by my culinary travels in Southeast Asia, highlighting Kerala ingredients.

This dish is an homage to my personal culinary journey. Being of Chinese Filipino decent, this dish is a culmination of the influence other countries have had on Filipino cuisine. I want to use this opportunity to showcase a beautiful bird sourced locally from Ontario,while flaunting a contemporary version of a classic dish replacing the pork. I’d like to think of myself like this Sinigang dish, a pinnacle of different influences and techniques I've learned from the different Chefs in my career.

Tikka Masala - a dish that started my culinary journey. It captivated me as a chef's apprentice with its layers of flavor, the first dish I mastered and the one that won my wife's heart, as the first dish I cooked for her. For this competition, I present it in two ways: whole, to enjoy it fully with all flavours present. But alongside it, a deconstructed version with all elements still present and polished, presented to highlight its individual mastery.

‘Quanto sei bella Roma’ is a tribute to my hometown, Rome. The title comes from a famous song about this city that for me is the most beautiful in the world. I left Rome about 10 years ago to grow personally and professionally, but my heart will always belong to it and I am happy to represent it with a dish in such an important competition. It is a traditional recipe that my grandmother used to prepare for me (Coda alla vaccinara) and which I propose in my own way, gastronomically speaking.

The dish idea combines Spain and Italy's linguistic and cultural ties, rich in shared elements I value. I'll merge Spanish stewed tongue with Italian cold tongue, reflecting my veggie passion. Ingredients like salsify, watercress, wild plants, and roots will be preserved, enhancing the dish and fostering a connection with nature.

My "Ossi di seppia" draws inspiration from Montale's work, where bones, wandering among the waves and seemingly worthless, symbolize a miserable yet significant existential condition. Like the small things in daily life, they conceal intrinsic value and beauty. By using every part of the cuttlefish, even those considered scraps, I aim to showcase their importance and convey the significance of circular cooking to reduce waste and valorise each ingredient.

The hen is the base of one of our emblematic typical dishes: the sancocho, a soup that is eaten at any time and on any occasion, it is cooked in firewood causing the soup to have smoky notes. It was with this idea that this dish was born, as I was curious about how to use the little parts of it, such as the neck, how the food ferments inside the gizzard and how through the use of one hundred per cent of the ingredients.

As a native of Nanjing, I have always held a belief that "no duck can leave Nanjing alive." From a young age, I may have had a certain obsession with eating duck. For this competition, the dish is based on Nanjing Saltwater Duck, using the Fujian Egret Duck, no part of the duck is wasted; Food is the foundation of life, and since ancient times, the path of cooking has always been about inheritance. Like an old tree with intertwined roots and lush branches, only by inheriting and being brave enough to innovate can new buds continue to sprout. This is akin to the theme "Old Tree, New Sprouts."

With this dish, I want to show that worldly flavors can be achieved with products from our own country or region, promoting sustainability and supporting local farmers and suppliers. This dish is entirely based on vegetables and fruits, and contains no animal products. By doing this, we challenge ourselves and demonstrate that the same flavors can be achieved without using animal ingredients.

Through this dish, I aim to showcase the harmonious blend of traditional Thai flavors with modern culinary techniques. It represents my journey and growth as a chef, guided by experienced mentors. The dish maintains the authentic taste and essence of Thai cuisine while incorporating innovative elements, reflecting a fusion of heritage and contemporary artistry. It tells a story of respect for tradition, creativity, and my passion for bringing a fresh perspective to classic recipes.

This dish stems from the global need to change the fine dining concept. I believe that the process of dining in a restaurant should be more educational, interestin and enjoyable for guests, with the help of other arts such as theatrical. With this dish, I will conjure up a performance about Sava Savanović, the first Serbian vampire, and country i came from, with the fact that in dish food will play the main role, where each segment of the dish will tell its own part of the story in this play.

“Bringing the beauty of this world to the plate” is the message I would like to convey with this ‘pop art’ style dish.My most memorable encounter with the courgette is that of seeding on a courgette farm. This exercise peaked my interest in where produce comes from, how it’s grown and how to best represent that in a dish.The courgette is simple; yet when used correctly, it can add beauty and freshness to a dish.

This dish represent my years of experience working in this industry, from a local pub or bistro, all the way to fine dining using the knowledge pass down to me from the chefs that came before me.I challenge myself to present a dish with ingredients that a I commonly not work with utilizing different cooking techniques, utilizing ingredients to their maximum minimizing waste, from the trimmings of proteins to the vegetable of stocks.

I was inspired by the future of global nutrition: I asked myself a simple question. Where is humanity going? In terms of evolutionary nutrition and fine dining I created this vegetarian course with the reflective purpose of having an eco-sustainable impact on planet earth. I was inspired in the construction of the dish by my homeland Puglia, in Italy, and I created it in a contemporary key.
