Mark Moriarty: "After A Year of S.Pellegrino Young Chef, Australia Calls"
The adventures of S.Pellegrino Young Chef are about to end for Mark Moriarty: the 2015 winner of the prestigious competition has spent the last year going from one culinary adventure to another.
As we wait for the 2016 edition of the contest launched by S.Pellegrino for chefs under 30, we followed Mark on the last leg of his world tour. The adventure on hand? The ninth edition of the Italian food festival LSDM, Le Strade della Mozzarella (The Streets of Mozzarella), where the chef exercised his magic on two famed Italian products: DOP Buffalo Mozzarella and pasta.
"I've had the chance to travel a lot more than most people my age, it will be difficult to stop traveling, but this year is ending. My plan is to go back to Australia for a while. After seeing the world I've found that Dublin is really too small. I was in Melbourne for work and would like to go back for a while."
S.Pellegrino Young Chef also gives winners the ability to see the world, experience different cuisines and change perspectives or even life.
Mark brings his unique culinary vision to LSDM: the 24-year old Irish chef breaks down the main ingredients of traditional dishes and puts them back together in a different way, with great imagination and attention.
He prepared Italian minestrone with gnocchi made from Parmesan, mozzarella and cream. The vegetables were all cooked differently and served in a fresh and green consommé.
Dessert was a gorgeous tart made from polenta and topped with buffalo mozzarella gelato and fried dough. Very Italian ingredients with Mark's signature touch.
