Eldar Muradov is the S.Pellegrino Young Chef 2015 Russia, CSI and Baltic region finalist. The Russian sous chef at Mansarda restaurant in St Petersburg will showcase his signature dish of sturgeon with mussels, spring onion, Jerusalem artichoke and smoked broth at the grand final at Expo Milano 2015 in June. He spoke to us ahead of the big event.
Tell us about your signature dish.
My dish is Sturgeon with mussels, Jerusalem artichoke and smoked broth. The strong point of this dish is the natural taste of the fish.
What made you decide to become a chef?
A soldier who doesn't want to be a general is a bad soldier.
Which chef or chefs inspire you daily and why?
I am inspired by my head chef Dmitry Bogachev, because he is always moving forward.
What’s the best dish you’ve ever tasted?
The best dish I've ever tasted is Fried potatoes with mushrooms and sour cream, cooked by my mother in the countryside.
What’s the most challenging aspect of S.Pellegrino Young Chef 2015 for you?
The impossibility to choose products.
Which kind of help/guidance would you like from your mentor?
To help me make a good design.
What will you do if you win this competition?
I will stay in Milan for some weeks for relax.
